What happens inside the cell during freezing
Ice crystals as the decisive factor
Freezing water forms crystals, and their size depends directly on the rate of cooling. In a domestic freezer a piece of vegetable cools over several hours, which produces large ice crystals that pierce the cell membranes. The result after defrosting: collapsed cells, escaped liquid and a soft to mushy texture.
Flash freezing turns that principle around. The water solidifies so quickly that the ice crystals which form stay microscopically small. The cell structure remains intact. After defrosting, the product shows almost the same consistency as before freezing.
Food technologists describe the range between β1 Β°C and β5 Β°C as the maximum ice crystal zone. This is where the greatest damage occurs, if the range is crossed slowly. Industrial flash freezing units bring products to core temperatures of β18 Β°C to β40 Β°C and cross this zone in minutes rather than hours.

Nutritional values: what the science says
The supply chain makes the difference
Fresh against frozen is only a fair comparison when the entire supply chain is taken into account. The German Federal Institute for Risk Assessment (BfR) points out that nutrient levels in fresh goods fall continuously through transport, storage and exposure to light. Vitamin C and B vitamins break down noticeably within days at room temperature.
Flash frozen vegetables processed within hours of harvesting can show a higher vitamin content than fresh goods that have been in the shops for two to four days. The German Nutrition Society (DGE) also confirms that frozen products stored correctly are largely equivalent in nutritional value to freshly processed goods.
